Baked Salmon Fillets with Pesto Topping

Ingredients

• Salmon fillets. One per person.
• Panko Breadcrumbs
• Pesto
• Parmigiano Reggiano Cheese
• Lemon

Instructions

• Pre-heat oven to 450 F
• Lightly coat base of Pyrex dish with olive oil to stop fish from sticking
• Place salmon fillets in dish with space between them so that they cook evenly
• Squeeze lemon over fish
• Mix equal amounts of breadcrumbs, pesto, and cheese and mix together
• Use a spoon to add the mixture on top of the fillets and spread evenly
• Top with additional grated cheese

Place in oven for 15-20 minutes.

Goes well with a Greek salad.
