Ingredients
- Salmon fillets. One per person.
- Panko Breadcrumbs
- Pesto
- Parmigiano Reggiano Cheese
- Lemon
Instructions
- Pre-heat oven to 450 F
- Lightly coat base of Pyrex dish with olive oil to stop fish from sticking
- Place salmon fillets in dish with space between them so that they cook evenly
- Squeeze lemon over fish
- Mix equal amounts of breadcrumbs, pesto, and cheese and mix together
- Use a spoon to add the mixture on top of the fillets and spread evenly
- Top with additional grated cheese
Place in oven for 15-20 minutes.
Goes well with a Greek salad.
