Ingredients
- 1 cup King Arthur all-purpose flour (no need to sieve)
- ½ cup whole milk
- ½ cup water
- 1 cup eggs (3-4 eggs depending on size)
- 1 teaspoon table salt
Method
Put all ingredients in a bowl and whisk well with an electric whisk. There is no need to let the ingredients stand to reach room temperature.
Preheat the oven (use convection bake setting) to 450 F. Put one teaspoon of olive oil in each section of muffin pan and put in the oven for 1-2 minutes (until hot but not smoking). Remove pan from oven and add batter to each section of muffin pan so that it is around half full. Place pan back in oven.
After 15 minutes, reduce the temperature to 350 F. Cook for a further 15 minutes. Do not open the oven door at any point before this, or they might collapse!
