Marinade
- Juice of 1 lime
- Same amount of olive oil
- Red chilli flakes (1 tsp)
- Pinch of Maldon sea salt
- Minced garlic (a few cloves)
- Grated ginger (1 inch piece)
Instructions
- Soak bamboo skewers in water
- Combine marinade ingredients in bowl
- Add 2lbs shrimp and mix with the marinade, making sure all shrimp are coated
- Pre-heat grill
- Once grill is hot and shrimp has marinated for 20 mins, put shrimp on bamboo skewers (I did 5 per skewer), making sure they are not touching each other
- Put shrimp on grill and cook for 3 minutes each side
